WHere is a simplified interpretation of a cocktail found on a new menu. Designed as a batch premix that's packed with the tastes of a Christmas time, which makes it perfect for your festive gathering. Save the extra syrup for brunch beverages, sweets, or to mix another batch of this cocktail.

Yields 10 people
To make the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Syrup: Combine all the ingredients into a saucepan, heat until it reaches a light boil, stirring to dissolve. After that, take off the heat and let it to cool entirely. Decant to a sterilised bottle, close it and store in the fridge, it will last for around a month.
To make Premix: Pour all the spirits and syrup into one big jug, let it rest for an hour, then strain , ideally through cheesecloth, so it's perfectly clear.
When ready to serve: Pour 85ml from the cocktail base into a stirring glass packed with ice, gently stirring gently for about 60 seconds until cold. Strain into an frosted cocktail glass or similar, decorate with a few cranberries and finish by giving it a light spray with the mandarin essence over the top.
